Chicago: The Purple Pig


Bread Service

A bread service with soft, salted butter arrived first. The bread was hot and freshly baked, and the assortment had a variety of textures and flavors. Pretty good introduction to the meal. 7/10

Smoked Pork Tongue

A tender pork tongue “sandwich” had a delicious filling of mac and cheese salad, working together for a smoky, sweet, and tangy bite. The flavors and textures in this dish really showed the amazing technique of the chef. 9/10

Prosciutto

The bread here was soft and perfect with the prosciutto. The olives and jam kept it interesting, and this was a pretty good but normal charcuterie board. 7/10

Crispy Pig Ears

Crispy kale and pig ears was covered with the broken egg yolk of a fried egg, but the dish as a whole was a bit one-sided with just too salty flavors and crispy textures. It desperately needed some different flavors in place of salt, as it became too salty as we ate more of it. 5/10

Roasted Bone Marrow

This insanely rich bone marrow spread on the soft toasted brioche made for the most amazing texture, and the onions and cilantro along with the flaky salt added a balance of flavor and textures. This presentation of Bone Marrow was one of the best I’ve ever had. 10/10

Grilled Octopus

Crispy and tender octopus was coated with a powerful acidic pesto. The intense herbaceous and sour flavors of the pesto were phenomenal with the well-charred octopus. However, with the green beans and onions the pesto became slightly overpowering. 9/10

Foie Gras

A fatty and soft piece of grilled foie gras rested on top of a dense custard, with a glaze of apples and maple. The glaze was a good pairing, but the foie gras itself was not great. Its texture was a little crumbly and flavor was too gamey. 6/10

Black Truffle Risotto

This amazing creamy, cheesy, umami, and earthy risotto was elevated by a touch of truffle oil and paste, but no actual truffles. Still, this dish was absolutely phenomenal in its smooth and creamy texture and powerful truffle flavor. 10/10


Final Review: This restaurant was undoubtedly a great restaurant with masterful technique and cooking. However, some of their flavor and texture combinations could have been worked on, and their dishes lacked sophistication and balance. The service was bare-bones and almost slow. This was a solid introduction to the Chicago food scene, but it also left a lot to be desired. 7/10
