Hong Kong: Forum (⭐️⭐️⭐️)

Located in one of many shopping centers, the restaurant has its own section up several flights of stairs and escalators. The ambiance is classic and intimate, with dark wooden furniture. The 3 Michelin Stars trophy is on its own table with a variety of accessories. There is also a glass display case filled with a mountain of Ah Yat abalone.

Pineapple Barbecue Pork Buns

This was an extraordinary beginning to the meal. It came out steaming hot, and the top was so shatteringly flaky while the bun was soft and sweet. The pork filling was tender, sweet, and savory. Finally, the piece of pineapple was a textural contrast and slightly tart and sweet. The best starting bites that I have ever had. 10/10

Shrimp Dumplings

These were also burning hot, but they were worth burning my mouth for. The clean sweetness of the filling was amplified by a slight savory flavor, and the broth was also really delicious. The peel was gelatinous and pleasantly sticky. 10/10

Turnip Cakes

The outside was crispy and charred, while the inside was really soft and slightly sticky. The interior had a potent radish flavor, and the ham added savory notes. 9/10

Ah Yat Abalone and Goose Web

The Ah Yat sauce was so flavorful, and the tender abalone soaked up all of that delicious, complex savory and umami flavor. Even better was the goose web, which was gelatinous and even more flavorful. The mushrooms were meaty and just complete umami bombs. The broccoli was also amazing at soaking up that sauce. This was a spectacular dish. 10/10

Oxtail

This sauce was also so decadent and complex, although less sweet and more intense than the abalone. The oxtail was perfectly fatty, gelatinous, and slightly firm still. There was an abundance of meat, and the potato was soft, fluffy, and flavorful. 10/10

Tofu Skin Wrap

The tofu skin was thin and a delicious wrapper for the mushrooms and carrots inside. The sauce was also flavorful, while the inside was sweet, savory, and earthy. 9/10

Lobster and Quail Egg with Crab Meat and Roe

The lobster was extremely tender and plump, and the flavor was so umami from the crab meat and roe. There were also hints of savory and sweet. The goose eggs had an interesting texture, with the yolk being completely done while the white was barely set. 9/10


Final Review: The food here was fresh, hot, and perfect. The flavors were intense and the textures were refined. The service was good, but not as personal and professional as the 2 stars I’ve been to, which was disappointing. Overall, this was an amazing restaurant worthy of 3 Michelin Stars. 10/10
