Hong Kong: T’ang Court (⭐️⭐️⭐️)

This restaurant was in a large and upscale hotel, and the ambiance reflected that. Everything about the setting was luxurious, and the space was very comfortable.

Char Siu Pork

The meat was fatty and tender, but it still had a crust. The glaze was also deliciously sweet and sticky. Excellent flavors and texture control. 9/10

Stuffed Crab Shell

The crispy shell led into a wonderful sweet and creamy, slightly vegetal, and extremely umami crab and onion filling. This was well-balanced and had great execution. 10/10

Fried Vermicelli

The outside was so crispy and light while maintaining a soft and pillowy inside. The contrast in texture was amazing, and the spices and XO sauce added a light savory and aromatic flavor. Extremely addictive and delicious. 10/10

Lobster with Onions, Green Onions, and Shallots

The lobster was absolutely perfect. The flesh was unbelievably tender and plump, while the small shells were fried to become shatteringly crispy. The flavors were a complex combination of sweet, savory, spicy, and aromatic. 10/10

Shrimp Dumpling in Broth

The clean broth was so full of umami from the dried scallop and shrimp. The dumpling was massive, and it also had some herbaceous notes from the cilantro. This was refreshing and delicious. 9/10

Abalone Tartlet

The flavors were good, with the umami of the abalone complemented by the complex savory and rich notes from the sauce. The tart was flaky and sweet, which was amazing with the soft and gelatinous fish maw. The abalone was a bit firm and not so tender. The quality of the abalone was disappointing for a 3 Michelin Star restaurant. 7/10

Fried Tofu with Crab

The crab was sweet and soft, while the tofu was amazingly fried, slightly savory, and burning hot. The interior also contained a mixture of the tofu and crab, adding even more umami to this dish. 9/10


Final Review: The food here was mostly incredible, and the lobster was one of the best I have ever had. However, the service is where the restaurant falls behind. The waiters were impersonal and inattentive. They only brought the food and nothing else, such as refilling cups of tea or checking up on us. In all, does this restaurant deserve 2 Michelin Stars? Maybe, but does it deserve 3 Stars? No. 8/10
