NYC: Ippudo


Pork Bao Bun

The bun had a nice blend of flavors with the mayo and spiciness adding more complexity. The pork was very tender, and the lettuce was crunchy. This complimented well with the soft and slightly sweet bun. However, it lacked creativity overall because it didn’t have anything unique. 7/10

Eggplant Tempura with Eggplant Hummus

The crispness on the outside contrasted nicely with the soft eggplant, but the sauce overpowered coated on the outside most of the eggplant flavor. However, the eggplant hummus on the bottom helped the eggplant flavor re-emerge and added more depth with the sourness. The frying was also a bit excessive because it ended up too thick and not that crispy. Regardless, it was a very nice starter with good flavors. 8/10

Akamaru Ramen

The broth had incredible umami that was complemented so well by the paste on top and the sauce. It had so much depth with the soy being evident first and the slight spice right after. Then, the aftertaste has the umami of the broth. The noodles were the perfect texture, and the bamboo shoots and chashu paired very nicely with the ramen, each bringing even more flavor and complexity. The egg gained a lot of flavor and was a nice addition. Easily the best ramen I have ever tasted. 10/10

Shiromaru Ramen

This ramen was more focused on purity than the other one. While it lacked the depth of the other one, the cleaness of the ramen was more evident. 9/10


Final review: The appetizers were pretty good, but the ramen was spectacular. Each had its own specialty, and it was not too much food. 9/10
