Amuse Bouche

The cream inside was rich and slightly sweet, which when paired with the brininess of the roe and glaze made a great combination. The outside was slightly crispy and flaky, with the inside being creamy and the roe having a pop. Flavorful and interesting. 10/10

Caviar

The duck plate was very interesting, and the waffles actually work well with the high-quality caviar. The butter was sweet and provided a nice backdrop for the caviar to shine. The waffle was also fluffy and crispy. 10/10

Kampachi

The sauce had a flavor of apple and the apple garnish made this dish sweet and herby. These flavors complimented the fish well, and the apple texture added crispiness to the fish's softness. The fish were slightly small though. 10/10

Winter Greens Salad

The dressing was slightly sour and herby, which along with the citrus fruit slices made it very refreshing. The slight bitterness of the vegetables were offset by the creaminess of the burrata, making it refreshing and rich at the same time. This was a very well-balanced and composed dish. 9/10

Sunchoke Agnolotti

The agnolotti filling had so much umami and the mushrooms on the side made this even more flavorful. There were these small crunchy bits that added texture and nuttiness. This was one of the best dishes I have ever had. 10/10

Brioche-Stuffed Chicken

The chicken was so tender and juicy, while the skin was super crispy. The stuffing had so much flavor with the herbs and the mushroom on the side had a black truffle cream under it. The sauce was also strong and added umami to this dish. This was one of the best chickens I have ever had. 10/10

Wagyu Beef

The beef was very tender and well-aged. The crust was well-pronounced and the sauce added a lot of flavor. The potatoes were crispy and they were fluffy. The mushrooms were pickled well in vinegar and added some nice contrast with the acidity, and at this point in the meal it was nice because I was getting quite full. The flavors were so bold and the textures were well-defined, as it seems for all dishes in this restaurant. 10/10

Ambrosia Pavlova

The merengue was a nice shell that complimented the sorbet underneath. The basil added a nice spiciness and the mixture on the side was tart, sweet, and refreshing. This was a fresh and refreshing dessert and a great way to end the meal. 10/10

Petit Fours

The cream puff had a nice filling with the outside being puffy and had a nice flavor. The gummies were soft and a nice snack to end the meal. 9/10


Final review: This restaurant had such bold flavors in all of the dishes and each one was impressive. The overall progression of the tasting menu was great and well-planned. The food was also a good amount, and the service was attentive. Overall one of my favorite restaurants that I have been to. 10/10
